I made Mary Berry’s ‘easy’ baked salmon recipe topped with a parmesan crust in 20 minutes


Mary Berry is known for her foolproof bakes, but she also has a wide range of foolproof meal recipes.

From her exceedingly good fish pie to her creamy Tuscan chicken and delicious 15-minute pasta recipe, Mary Berry has cooked a wide range of dishes.

Mary claims this is her “foolproof recipe” for “easy” baked salmon for anyone looking for a simple way to cook salmon to guarantee it tastes delicious.

The salmon is topped with a luscious crunchy parmesan crust and can be on the table in no time.

The salmon took me just five minutes to prep and cook in the oven for 15 minutes.

While the original recipe gives ingredient amounts for six potions I decided to use enough just for two portions.

Ingredients 

Two salmon fillets

50g cream cheese

One crushed garlic clove

Half a lemon, grated rind only

10g breadcrumbs

10g grated parmesan

One tablespoon grated parmesan

Paprika, to garnish

Salt and pepper, to season

Method 

I started by weighing out the ingredients listed above and chopping the garlic and parley.

I also grated the lemon, making sure to only get the rind. Next, I preheated the oven to 180 Fan/200C/Gas 6.

I then seasoned both sides of the salmon fillets with salt and pepper and placed them both on parchment paper on a baking tray.

The next step was to mash the cream cheese with the garlic, salt, pepper and lemon rind.

After I divided the mixture into two and topped it over each of the salmon fillets.

I then combined the breadcrumbs, parmesan and parsley in a small bowl and sprinkled it on top of the cream cheese mixture, before dusting with paprika.

All that was left to do was to bake it in the oven. I found that my salmon was ready after 15 minutes, but leave it a little longer if you think it’s not ready after that time.

To tell when the salmon is done, it will have changed from translucent to an opaque pink.

The breadcrumb topping added a beautifully crispy texture to the salmon and made it taste amazing.

This baked salmon can be paired with so many things, I opted for some tender stem broccoli and creamy mashed potatoes.
