How to make healthier berry pancakes with no flour required – recipe

Pancakes come in so many shapes and sizes but one thing they all have in common is that they pair perfectly with fruit.

Whether it be bananas, citrus fruits or berries, there are endless flavour combinations that work with such healthy toppings.

Those looking for a quick and easy pancake recipe without having to buy lots of ingredients can stop here thanks to Love Fresh Berries.

Their formula for flourless pancakes means you can whip up a stack in minutes without having to reach for refined flour, which can add extra sugar and starch to the plate.

Not only is it healthier than most recipes, but has a blend of delicious and colourful fresh fruit for natural sweetness.

Method

Start by grinding the oats down to make the flour. A blender or food processor is essential to do this, and it should only take a few minutes.

Once blitzed into fine grain, transfer to a bowl and mix with the baking powder, salt and cinnamon. Next, rinse and slice the fresh blueberries in half then set aside.

Break the banana into chunks and add to the blender along with the milk and vanilla extract, then blend until smooth.

Combine the wet mixture with the dry ingredients and stir to fully combine everything. Fold in the blueberries, taking care not to mush them up before cooking.

Take a large, non-stick frying pan and heat the coconut oil until the pan is coated. Spoon a few tablespoons of the pancake batter into pools in the pan and cook for a few minutes.

Flip over to cook for a minute more on the other side, or until the pancakes are cooked through but not too golden. Repeat with the remaining mixture.

Serve the pancakes with a drizzle of honey or maple syrup and any leftover blueberries.
