Meghan Markle’s ‘delicious’ lemon oil cake recipe is super simple to bake


Meghan Markle once called herself a “California girl foodie” on her old lifestyle blog The Tig, and has shown off her cooking skills by cooking a tasty lemon oil cake.

The Duchess first shared that she enjoyed baking in 2021 when she made a lemon oil cake to help provide meals for women as part of the Archwell Foundation and World Central Kitchen in honour of Women’s History Month.

At the time, Meghan wrote: “Sometimes we overlook how much it matters to express thanks and show appreciation. Perhaps we realize now more than ever that fundamental human moments, like enjoying a meal together, fill us up with more than just food (even if that food is delicious!).

“To that point, we hope you enjoy the offering we baked for you—a small token of thanks, from our home to yours. Our hope with this effort is to show that, when we all participate, even the smallest actions can have a ripple effect. Even individual actions can impact the whole of us.”

Earlier this year, Meghan contributed the cake recipe to a cookbook by chef José Andrés’ from World Central Kitchen alongside other household names such as Michelle Obama and Guy Fieri.

Method

To begin, preheat the oven to 180C (350F). Grease a pan and line it with baking parchment paper. Make sure to wrap the outside as well to prevent leakage.

Place your olive oil, eggs, and sugar in a large mixing bowl and mix well together. Next, add the vanilla extract, lemon zest, and lemon juice.

Then mix the remaining dry ingredients together. Sift in the flour, baking powder, baking soda, and salt into a separate bowl.

Slowly add the dry ingredients to the wet ingredients mixing bowl, in batches, making sure to slowly add in your milk as you mix.

Try not to overmix, but make sure there is no streaks of dry flour in the batter before you continue.

Pour the batter into the pan and sprinkle two tablespoons of granulated sugar on top.

Bake in the preheated oven for 50 to 55 minutes until the cake has risen and is golden brown in colour.

Once fully cooked, remove from the oven and allow to rest for 10 minutes in the pan.

Carefully remove the cake from the pan and set it aside to cool completely.

Once completely cooled, top with powdered sugar for decoration.

Your delicious lemon cake is now ready to serve.
