Make Mary Berry's healthy and 'lovely' crab courgette spaghetti – recipe


Spiralising courgettes is key for Mary Berry’s recipe, but you can buy them readily prepared in most supermarkets.

The addition of courgettes are said to give the meal a “lovely texture”, said Mary Berry.

And the vegetable (although technically a fruit, as it contains seeds), houses plenty of anitoxidants, fibre, vitamin C, and potassium.

As such, courgettes may help to stabilise blood sugar levels and could help to improve heart health.

Low in calories, courgettes are also a great ingredient to support weight loss goals.

Crab courgette spaghetti recipe

Serves: four

Ingredients:

  • 200g (7oz) spaghetti
  • Six tbsp olive oil
  • One large banana shallot, thinly sliced
  • One red chilli, deseeded and diced
  • Two garlic cloves, crushed
  • Three courgettes, spiralised into spaghetti-like strands
  • 100g (4oz) fresh white crab meat, or tinned white crab meat, drained
  • Juice of half a lemon
  • Small bunch of dill, chopped

Method

1. Cook the spaghetti in boiling salted water according to the packet instructions. Drain well.

2. Place three tablespoons of the oil in a large frying pan over a medium heat. Add the shallot and fry for three minutes.

3. Add the chilli and garlic and fry for 30 seconds. Increase the heat, add the spiralised courgettes and fry for two minutes.

Mary Berry cautioned: “Be careful not to overcook otherwise it will be watery.”

4. Add the crab meat, cooked spaghetti, lemon juice and dill. Drizzle the remaining oil into the pan and season with salt and lots of black pepper.

5. Toss everything together then serve at once.

This recipe is not suitable for freezing, but leftovers can be stored in the fridge.
