Mac and cheese that went viral and broke the internet is 'the best recipe ever'


Instructions

Preheat the oven to 176 degrees Celsius. Start by cooking your pasta. Bring a pot of water to a boil, and add in your pasta. Cook until al dente.

Shred you mozzarella, colby jack and sharp cheddar cheese. @tinkeyounger said never use pre-shredded cheese, as it doesn’t have the same consistency when melted. Once shredded, combine all the cheeses, separating it into two bowls.

Mix together salt and pepper, garlic powder and smoked paprika. Melt butter in a pan, and once melted, add half the seasoning.

Add in flour and stir constantly to make a roux. Once combined, add a can of evaporated milk. Immediately whisk to avoid clumps of flour, and continue doing so until it gets thicker. Add in the heavy cream and continue to whisk, sprinkling in the remaining seasoning.

Next add Dijon mustard, a step some may find strange. @tinekeyounger swears by this addition, saying even if you don’t like mustard, you’ll like this. She said if she doesn’t have Dijon, she’ll use brown mustard.

Before adding cheese, continue whisking the sauce until it thickens. Then, add in one of the bowls of cheese mix. Slowly sprinkle the cheese in, letting it melt. Once everything is combined, add in pasta. Mix until noodles are fully covered.

In a rectangle baking dish, add one layer of cheesy pasta. Cover with a layer of shredded cheese mix from the second bowl. Add another layer of pasta, and then layer on the remaining shredded cheese.

Put the dish in the oven for 25 to 30 minutes, or until cooked through. Broil it for 2 more minutes, creating a crust on top of the cheese.

For the last step, add chives to the top of the dish.
