Jamie Oliver’s one-pot ‘easy’ garlic chicken midweek dinner can be cooked in 15 minutes


Late winter is a time when many people are tired of the cold weather outside and are looking for a quick homemade meal to cheer themselves up.

Jamie Oliver’s one-pan garlic chicken is a creamy and delightful dish which is not only delicious but easy to make in only 15 minutes. Jamie first shared this simple recipe in his cookbook ‘5 Ingredients Mediterranean.’

This dinner is perfect for when you are looking for a dinner which is cheap and easy but still mouthwatering, plus it is all cooked in one pan which can help save time on the washing up.

Instructions

To begin, place one tablespoon of olive oil into the frying pan.

Peel the garlic cloves and slice lengthwise, then drop the garlic into the frying pan and cook on a high heat. Make sure to stir regularly.

Cut each chicken breast length into three strips, then season with salt and pepper. Once the garlic is fully cooked and golden, remove it from the pan with a slotted spoon.

Set the garlic aside on a plate and leave the garlic-flavoured oil in the pan.

Place the chicken strips into the pan and cook for roughly five minutes until the chicken is fully cooked through and golden brown. Then, remove the chicken from the pan and set aside for now.

Pour the chickpeas and the juices from the tin into the pan along with the spinach, the garlic and one tablespoon of red wine vinegar.

Cook until the spinach has wilted and the chickpeas are hot, then season with salt and pepper, Return the garlic to the pan, then season generously with sumac.

Your garlic chicken served with creamy chickpeas and spinach is ready to serve.
