Cabbage is a vegetable that often splits opinion, much like Marmite: it’s either adored or despised. This polarising view stems from its potent smell, lacklustre flavour and, when overcooked, its mushy texture.
However, even the most unloved vegetables can be transformed into a tasty dish with the right cooking techniques; there are ways to cook cabbage beyond just boiling it, which can enhance its flavour. A recipe that might just change your mind about cabbage is from culinary whizz at Downshiftology, who shared a simple trick using just two ingredients, turning this humble vegetable into a delectable, savoury dish bursting with flavour in a mere 20 minutes.
Ingredients
Sharing their reasoning for using Ghee, the food expert said: “Cooking with ghee is my go-to method. Unlike butter, which can burn easily when sautéed too long, or olive oil, which lacks that sweet, rich flavour, ghee offers the best of both worlds.
“Some like to mix butter and oil to raise the smoke point, but honestly, ghee does the job perfectly on its own—it’s stable at high heat and brings a delicious buttery taste.”
Method
Add the garlic and continue to cook until it releases its aroma. Then, introduce the cabbage to the skillet.
Allow it to cook for 12 to 15 minutes, stirring occasionally, until it softens and develops a beautiful caramelised hue.
Finally, season with salt and pepper to your liking. Give everything a good stir to mix well, and serve.
Savour this sautéed cabbage as a side dish alongside chicken, lamb chops or a traditional shepherd’s pie. Alternatively, enjoy it as a one-pan meal with shredded meat or as part of a hearty breakfast.
