'So fluffy in your mouth!' Make extra creamy scrambled eggs with surprising ingredient


Scrambled eggs can be eaten in so many different ways but one thing that they should always be is creamy.

While some people turn to milk, butter and cream for a boost of richness, one TikTok chef has revealed that the key ingredient for perfect eggs is hiding in the kitchen cupboard.

Gabriela, better known as (@gourmetgab) brands herself as “egg-obsessed” and has more than 47.8k followers on the social media platform.

In a video posted as part of her “12 days of eggs” series, she said: “These extra creamy scrambled eggs have an ingredient you might not be expecting. Cornstarch!”

Also known as corn flour, the product is a known thickening agent often used in sauces to improve their texture.

Demonstrating how to make the recipe, @gourmetgab explained that it involves a few other simple cooking tips as well as the star ingredient.

Gabriela started by chopping up a small knob of cold butter into even-sized cubes before measuring out two level teaspoons of cornstarch in a small bowl. She claimed that potato or tapioca starch would also work in this recipe, but corn is best.

The next step was to add a small dash of water to the bowl and whisk it with the starch to form a loose paste. After this, the TikTok star added the cubed butter and mixed it all, though with some difficulty due to the cold butter.

At this point the star of the show, the four eggs were cracked directly into the same bowl with the other ingredients. Gabriela seasoned with salt and pepper before whisking again.

Once the scrambled mixture was prepared, the TikTok chef heated a large non-stick frying pan over medium heat and added one tablespoon of cold water. She said: “Once the water is almost evaporated you know the skillet is the right temperature for cooking.”

The scrambled eggs were then poured into the pan and gently folded with a spatula. Gabriela noted that she made larger “fluffier curds” by stirring the mixture less and in bigger motions.

As they cooked, the egg-obsessed chef pointed out how much the eggs were puffing up in the pan. The beautifully golden mixture was then ready to remove from the heat which Gabriela noted should be “the second they’re done” to avoid overcooking.

On the plate, she seasoned the eggs with salt and pepper once again before tucking into them. The TikTok star said: “Whoa! First of all, I think the reason these eggs are so creamy is because of all of that butter.

“Besides the rich butteriness, these eggs are also so fluffy in your mouth, like little clouds that have a kind of a little bit of bounce.”
