'Quick and easy' cinnamon roll recipe with two-ingredient dough cooks in just 30 minutes


Cinnamon rolls taste delicious when accompanied by a coffee or a cup of tea. The rolls are known for their scroll-like shape and their butter, brown sugar and cinnamon centre.

There are a plethora of different varieties of cinnamon rolls with some people flavouring the dough with lemon or adding chocolate to the filling.

Usually, cinnamon rolls are made from enriched dough and yeast which takes time to rise.

However, this recipe from Cassie at Cook It Real Good doesn’t involve making an enriched dough but a simple two-ingredient dough that doesn’t need time to rise.

The delicious recipe can also be cooked in the air fryer or oven, making it a “quick and easy” breakfast option.

Cassie said: “They’re super fluffy and light and can be made in the oven or the air fryer. Just a perfect little treat for breakfast, snacks and lunch boxes.”

Using a yeast-free dough means these rolls can be ready in less than 30 minutes.

Ingredients:

  • One cup of Greek yoghurt
  • 1.5 cups of self-raising flour + more for dusting
  • One tablespoon unsalted butter, melted
  • Half a cup of brown sugar
  • 1.5 tbsps Cinnamon

Ingredients for optional glaze:

  • Half a cup of icing sugar/processed sugar
  • Half a teaspoon of vanilla extract
  • One to two tbsps of milk

Method:

1. Line a baking tray with a silicone mat or baking paper and preheat the oven to 180C.

2. Next, make your dough by placing the yoghurt in a mixing bowl alongside one cup of flour. Stir to combine. Add more flour to the mix until it forms a dough ball.

3. Put the dough onto a well-floured surface and knead it with your hands for a couple of minutes. If the dough is too sticky, add more flour and continue to knead it. You’ll know when the dough is ready when it can hold its shape and it’s no longer sticky.

4. Roll the dough into a flat rectangular shape before brushing it with the melted butter. Liberally sprinkle the brown sugar and cinnamon on top of the butter.

5. Once evenly covered, roll the dough up vertically and cut it into eight equal pieces. Each piece should resemble a scroll.

6. Put the pieces onto a baking tray ensuring they’re spaced out evenly so they can rise. Allow them to cook for 10 to 15 minutes until they look golden brown. Place them on a cooling rack once cooked.

7. If you’re choosing to make the glaze, mix all the ingredients together in a bowl until a smooth glaze is formed. Drizzle it over the rolls.

If you’re using an air fryer, follow the same method and put them in the appliance on baking paper.

Cook the cinnamon rolls for 10 to 15 minutes in the air fryer at 180C and move them to a wire rack once they’re cooked.
