A perfect bowl of porridge should taste wonderfully creamy, neither gritty nor watery. Yet despite its simplicity, achieving the ideal porridge can prove surprisingly tricky.
If you’ve ever stood over your hob, stirring and hoping for that silky, velvety texture you’ve enjoyed in cafés or restaurants, only to end up with something too thick, too thin, or lumpy, you’re certainly not alone. It’s a frustration many home cooks have experienced. Regardless of how precisely the oats were measured or how diligently they were stirred, homemade porridge rarely seems to match that perfect, smooth consistency.
One of the best porridges around — and a regular purchase on the morning commute — is Pret A Manger’s. Irresistibly creamy with a flawless consistency, it prompted a deep dive into what makes it taste so exceptional.
After discovering the recipe online, which the popular eatery had shared on its social media channels, I found that recreating it at home proved to be a revelation. Pret’s porridge doesn’t rely on indulgent extras like cream, honey, or sugar to deliver its gorgeous creaminess.
There’s no secret ingredient whatsoever — just a straightforward combination of water and milk.
The real trick lies not in what is added, but in the cooking technique itself. The oats — particularly good-quality jumbo oats — naturally develop a creamy texture when cooked slowly and gently, allowing the starch to thicken the liquid into a wonderfully smooth, almost custardy consistency.
Creamy porridge recipe
Adapted from Pret A Manger.
Ingredients
- 180g whole milk
- 140g water
- 50g rolled oats
Method
Place your oats and cold water into a saucepan. Stir thoroughly before switching on the heat — this helps prevent the oats from clumping.
Bring the water to a gentle simmer (not a rolling boil). Applying too much heat too quickly can cause the oats to break down unevenly or stick to the pan’s bottom.
Simmer for two to three minutes, stirring regularly, until the mixture begins to thicken and the oats soften slightly. Pour in the milk and stir thoroughly, scraping the bottom of the pan to loosen any oats that may have begun to stick.
Continue to simmer gently over a low heat for approximately five to 10 minutes, stirring frequently. You’ll notice the texture gradually transforming.
The oats will plump up fully, the liquid will turn silky, and the entire mixture will develop a glossy, creamy consistency.
Finish off your porridge by adding your preferred topping. My favoured choice is honey or soft brown sugar.
However, you can also add jam, peanut butter, nuts and seeds, compote, granola or fruit and berries.
