This simple piri-piri chicken traybake is ideal for a quick family dinner, as it can be prepped in just 20 minutes and serves two adults and two children. Simply season the chicken and arrange all the ingredients on an oven-safe tray, and you’ll have a filling, nutritious result in just under an hour.

How to make piri-piri chicken traybake recipe
Ingredients
- Three large sweet potatoes (about 900g), peeled and cut into large chunks
- Oil, for drizzling
- Six to eight chicken thighs, skin left on
- Two red onions, cut into wedges
- 25g sachet piri-piri, spice mix (or a mild option, if preferred)
- 300g long-stem broccoli
Method
Preheat the oven to 180C, or 160C with a fan (gas mark four). Place the sweet potatoes in a large roasting tray, coat them generously with oil, season well, and arrange them on one side of the tray.
On the opposite side, combine the chicken and onions with the spice blend, a little oil and seasoning, mixing thoroughly.
Place the tray in the oven and cook for 40 minutes, turning the contents halfway through the cooking time.
After this, add the broccoli to the tray, drizzle with a touch more oil, season, and return to the oven for another 10 to 15 minutes.
Once cooked, take out the chicken, onions and broccoli. Use a fork to roughly mash the sweet potatoes in the tray, making sure to mix in any juices and spices left behind.
Spread the mashed potatoes evenly across the base of the tray, then arrange the broccoli, chicken and onions on top. Serve directly from the tray at the table.
