Nigella Lawson’s effortless recipe combines a mix of frozen seafood with garlic, white wine and chilli flakes to create a light yet luxurious meal in minutes. With minimal prep and ingredients you likely already have in your kitchen, it’s a no-fuss solution that doesn’t compromise on taste.
Nigella recommends serving the seafood with crusty bread and cooked pasta if you fancy a more filling meal. But, best of all, the entire dish can be on the table in just 10 minutes – making it a fast favourite for seafood lovers.
Seafood supper
Serves two to four people
Ingredients
Pinch of saffron threads
250ml freshly boiled water
Four teaspoons garlic infused olive oil
Six spring onions, finely sliced
Half teaspoon dried tarragon
125ml dry white wine
227g can chopped tomatoes
One teaspoon Maldon sea salt flakes
400g frozen mixed seafood
Pepper, to taste
Fresh herbs, to serve
Method
Put the saffron threads in a cup and add 250ml of freshly boiled water.
Warm the garlic oil in a wide, shallow, heavy-based pan over a medium heat and fry the spring onions and dried tarragon for a minute.
Add the wine and let bubble for a minute, then add the saffron in its yellow water, followed by the tomatoes. Bring to a boil.
Add (half of) the salt, add the frozen seafood, let it boil, then turn the heat down to medium and cook for three to four minutes (according to packet instructions).
Season with pepper and salt, sprinkle with herbs, and serve with some crusty bread. Can serve mixed in with cooked pasta.
