Jamie Oliver shared his super easy cheese puffs recipe that is the “perfect” addition to a New Year’s Eve grazing board.

Whether you only have the family at home or guests coming over, treat yourself to the chef’s cheese puffs before the stroke of midnight.

Requiring at least two hours in the fridge before baking, these are best prepared as soon as possible.

Even if you don’t manage to make them today, there’s always tomorrow to celebrate New Year’s Day.

“Pairing a glass of something delicious with something salty and textured is, for me, the perfect combo,” Jamie Oliver said of his cheese puffs.

Jamie Oliver’s cheese puffs recipe

Serves: eight people

Ingredients

50g Parmesan cheese

100g Lincolnshire Poacher or Cheddar cheese

50g unsalted butter

100g plain flour

50g fine semolina

Three large eggs

Method

Finely grate all of the cheese. Place the butter in a pan on a medium heat with 250ml of cold water. As soon it comes to a rolling boil, tip in the flour, semolina and a pinch of sea salt.

With a wooden spoon, beat vigorously until smooth and starting to come away from the sides of the pan.

Remove from the heat and beat for 30 seconds, then, one at a time, beat in the eggs, followed by the grated cheese. Cover and refrigerate for at least two hours.

Line a baking sheet with greaseproof paper. With wet hands, divide the mixture into 24 pieces and roll into balls, lining them up on the tray as you go.

Preheat the oven to 200C (400F/gas six). Bake uncovered for 20 minutes, or until golden. Enjoy warm with a glass of something cold and sparkling.
