Working, socialising, trying to get enough sleep and also trying to eat somewhat healthily can sometimes feel borderline impossible. After a long day, the last thing you’re likely to want to do is stand over the hob stirring an intensive meal. That’s why tray bakes are the perfect solution to the age old question of ‘what should I have for dinner?’

This Nigella Lawson chicken and chorizo traybake is perfect for midweek dinners as it requires very little effort. As Nigella writes: “Enjoy the easefulness of the oven: you just bung everything in, and you’re done.”

Comments on the recipe mention how simple it is, as well as how tasty. One person wrote: “Delicious as always! I have tried at least a dozen Nigella recipes and am yet to be disappointed. I love these simple tray bakes, so much flavour with so little effort.”

Another said: “It was absolutely delicious, even my picky teenage daughter ate every last bite. I’m cooking it again tonight.”

Nigella Lawson chicken and chorizo traybake

Ingredients

  • Two tbsp olive oil
  • 12 chicken thighs, skin on and bone in
  • 750g chorizo
  • One kg new potatoes
  • Two red onions, peeled and chopped
  • Two tsp dried oregano
  • Grated zest of one orange

Method:

Preheat the oven to 220C and put one tbsp of olive oil each in two large roasting trays

Rub the skin of the chicken in the oil, then turn skin side up and arrange across the two trays – six pieces in each tray

Divide the chopped chorizo and the potatoes across both trays, then sprinkle over the onion and oregano.

Grate the orange zest over both tins.

Cook for one hour, but at the 30 minute mark switch the two trays’ positions in the oven and baste with the juices
