If you’re bored of eating the same ready meals, pasta dishes and oven chips during the week, Mary Berry’s simple salmon recipe might be the recipe you need to spice up your midweek dinners.
The recipe, which Mary has described as “quick”, includes just eight ingredients and five easy steps.
It can also be prepared ahead and then cooked, making it a great option for a speedy working-from-home lunch.
The parmesan and parsley crust gives the salmon a delicious salty crunch while the salmon itself is tender and moist.
Once prepared, the salmon cooks in just 15 minutes. Mary Berry said of the recipe: “Quick salmon fillet recipe with a delicious and crisp herb crust. Good to prepare ahead ready to cook.”
How to make Mary Berry’s baked salmon with parmesan and parsley crust
Ingredients
Six x 150g (5oz) salmon fillets, skinned
salt and freshly ground black pepper
150g (6oz) cream cheese
small clove garlic, crushed
Half lemon, grated rind only
25g (1oz) fresh white breadcrumbs
25g (1oz) fresh, coarsely grated parmesan
Two tbsp chopped fresh parsley, plus extra to garnish paprika
Method
1. First, preheat the oven to 200°C/180°C Fan/Gas 6.
2. Next, season both sides of the salmon and pop them on a well-greased baking sheet or in a roasting tin.
3. Mash up the cream cheese with the garlic, salt, pepper and lemon rind. Divide it into six and spread it on the top of each of the salmon fillets. Add the breadcrumbs, parmesan and parsley, mixing thoroughly. Sprinkle them on top of the cream cheese mixture. Dust with paprika.
4. Bake the salmon in the oven for 15 minutes. The salmon is done when it’s an opaque pink.
5. Serve immediately with more chopped parsley.
