Make 'thick and comforting' turkey soup in 25 minutes with Christmas leftovers – recipe


A warming bowl of turkey soup has many benefits, from soothing a winter cold or using up leftover meat stored in the fridge.

While there are so many ways to make this classic Christmas recipe, the easiest method is to combine stock and herbs for a flavoursome dish.

Sharing the recipe on his blog Neil’s Health Meals, food blogger Neil claimed: “This is a thick and comforting turkey soup for the winter season, and perfect for turkey leftovers!”

He continued: “I’ve added rice as a cheap “bulk up” grain but you can add any different kind of vegetables you want to change it up a little or to substitute for the rice.”

The versatile dish lends itself to endless ingredient variations, including carrots, parsnips, sweet potatoes, green beans, peas and more. And they can all be cooked fresh or as leftovers.

Turkey soup recipe

Start by heating the olive oil in a large saucepan then add the diced onion.

Allow two to three minutes for it to saute until softened, then stir in the shredded turkey and tarragon.

Follow with the chicken stock and bring everything to a boil in the pan.

Once bubbling, lower the heat and leave to simmer for 20 minutes until the soup is cooked through, then remove from the heat entirely.

Stir in the milk then season the soup with plenty of salt and pepper to taste.

Chilli flakes can be added at this point too for an extra kick of flavour, or try something like garlic for added depth.

Serve the soup hot from the pan in bowls and top each one with a garnish of tarragon.
