Make Jamie Oliver’s ‘utterly delicious’ lamb stew recipe with just five ingredients


Stews are perfect to make when you are craving something rich and hearty for dinner, and this recipe is very simple to make.

Jamie Oliver’s lamb stew recipe is made with just five ingredients and only takes a few minutes to prepare before it slowly cooks in the oven.

This meal is the ultimate “comfort food” according to Jamie, who has shared his recipe from his cookbook “5 Ingredients – Quick and Easy Food.”

In a video online, Jamie said: “We are going to make a succulent lamb stew. It’s utterly delicious. Made with beautiful lamb shoulder, mixed olives, plum tomatoes, fresh rosemary and cheeky little silver-skinned pickled onions.

“It’s the kind of comfort food that makes you really happy. It feels like you have to work really hard to achieve such big flavours, [but] you don’t! Five or six minutes putting it together and then you bang it into the oven.”

Instructions

To begin, preheat the oven to 170C/325F/Gas Mark 3.

Place your casserole pan on the stove on a high heat. Add your rosemary leaves and one tablespoon of olive oil to the pan.

Leave the rosemary to cook in the pan for one minute and cut your lamb into chunks around 3cm thick each.

Take out the rosemary leaves and set them advice. Add the lamb chunks to the pan and cook for around two minutes to colour them.

While the lamb is cooking, prepare the other ingredients. Squash the olives, remove any stones if they have them and drain any water from the picked onions.

Pour in the olives, pickled onions and tinned tomatoes into the pan. Mix them in well and use a wooden spoon to break up the tomatoes. Add two tin worth of water to the pan as well.

Cover the pan with the lid and place in the oven. Leave to cook for around two hours or until the stew has thickened.

Check on the stew regularly and at the halfway cooking point, stir and add a splash of water if too thick.

Once ready, season the stew with salt and pepper. Place the crispy rosemary leaves on top.

Your simple yet delicious stew is now ready to serve.
