Jamie Oliver's healthy protein bread is the perfect snack or 'portable breakfast' – recipe


Protein-packed snacks are perfect for a pick-me-up throughout the day but many are centred around sweet ingredients.

Luckily for those with a more savoury palette, British chef Jamie Oliver has the perfect solution in the form of a nutty, seeded loaf.

Sharing the recipe on his website, Jamie claimed that it’s perfect for “morning gym-goers”.

He added: “This healthy protein bread is a great portable breakfast that will help with muscle repair and growth.”

While the recipe resembles savoury bread, the texture is fine and crumbly more like a sweet loaf.

Healthy protein loaf recipe

Start by preheating the oven to 190C then line a 1.5litre loaf tin with baking paper. Next, measure out 375ml of warm water then add the yeast and oil to the same jug or bowl, mixing with a fork until combined.

Leave the yeast mixture to sit for five minutes while focusing on the dry ingredients. Add the flour, ground almonds and all the seeds into a large bowl with a pinch of sea salt and make a well in the middle.

Chop up the rosemary leaves and add them to the mixture followed by the eggs, and the Marmite (if using). Beat everything together before adding the yeast liquid to the batter.

Whisk the wet and dry ingredients together constantly while gradually bringing in the flour from the outside of the bowl until combined.

According to Jamie, it will appear more like a batter than dough at this point, when it’s then ready to be transferred into the tin.

The chef said: “Now you’ve got two choices – bake it straight away and it’ll puff up a bit more and taste fantastic, or cover and place it in the fridge overnight and allow some slightly more complex sour flavours to develop. Both are brilliant, just different.”

To bake the loaf, place in the central part of the oven for 45 minutes until golden and a skewer comes out clean when inserted.

Cool for at least 20 minutes before serving.
