I made easy marry me chicken recipe that tasted delicious – only took five minutes to prep


Cooking can often feel like a hassle after a busy day, so I’m always on the lookout for easy, yet great tasting, recipes.

After loving his creamy garlic and paprika recipe, I was eager to find other meal ideas from Chef Jon Watts.

One that stood out to me was his marry me chicken recipe which he described as being: “The most delicious creamy chicken with no fuss at all”.

While the original version of this recipe is made in a pan over a medium-high heat, Jon has adapted this easy recipe so it can be made in the slow cooker.

On busy days it’s great to be able to serve up a complete meal without much effort.

This dish will be ready in two hours if cooked on a high heat in the slow cooker or in four hours if left on a low heat. However, the prep time is only five minutes, but it probably took me less than that.

Ingredients 

500g chicken thigh fillets

One onion, diced

150g sun-dried tomatoes

Two garlic cloves, chopped

300ml chicken stock

Two tablespoons tomato paste

One teaspoon dried thyme

One teaspoon oregano

100g cream cheese

40g parmesan grated

15g fresh basil torn

Method 

I began by weighing out all of the ingredients and chopping and dicing what needed to be prepped. This included cutting the chicken thigh fillets into bite-sized pieces.

I then added the chicken into the slow cooker along with the onion, sun-dried tomatoes, garlic, chicken stock, tomato paste, thyme and oregano.

I stirred all the ingredients before covering them with the lid and setting the slow cooker to high for two hours.

After the two hours had passed, I added the cream cheese, parmesan, and basil before giving it another stir.

I did find that the sauce was very thin at this point, so I decided to add two teaspoons of cornflour to help thicken it up more and just left it cooking for a little longer.

After a few minutes, the sauce had thickened up nicely and it was time to dish it up.

I decided to pair it with some pasta, but the sauce can go with almost anything like mashed potatoes or rice.

Cooking the chicken in the slow cooker ensured that the meat wasn’t dry. Instead, it was so juicy and tender.

While there are so many great flavours in this dish, it’s also a pretty simple recipe that I feel anyone can make.
