Cookies are a delightful indulgence but they’re often packed with sugar and other artificial ingredients that you wouldn’t usually find in your home kitchen. However, it’s entirely feasible to recreate the sweet taste and satisfying texture of a good cookie without resorting to synthetic ingredients that make it ultra-processed.
This means you can enjoy them guilt-free, and even share them with your children. Consider these almond cookies for example. While they do contain sugar, they’re free from additives like emulsifiers and maltodextrin, which food manufacturers use to extend shelf life and increase profitability (and could potentially be more harmful to your health than you think).
I discovered this recipe on the Zoe app, which I joined in an effort to improve my health and the quality of my diet (you can read about that here) after deciding to completely eliminate ultra-processed foods.
The simplicity of the recipe surprised me, as did the satisfying outcome. I’ve tried to make healthy cookies in the past, but they’ve often been bland and unenjoyable.
How to make healthy cookies
You will need
- A couple of bowls for mixing
- A tray for baking

- Brown sugar, 2 tbsp
- Flaxseeds or Linseeds, 1.5 tbsp
- Water, 2.5 tbsp
- Pecans, 35g
- Dark chocolate, 55g
- Ground almonds, 130g
- Salt, pinch
- Extra virgin olive oil, 2 tbsp
