Scrambled eggs are such a popular breakfast choice, but there’s a lot of differing opinions on how they should be served. Some people like big, chunky curds, whilst others prefer an almost liquid variation.
If you’re somewhere in the middle, it’s actually easier than you think to make the perfect scrambled eggs. It can be stressful given how little time you actually have once they’re in the pan, but the key is in the preparation. One professionally trained chef on TikTok has shared her secret for the perfect scrambled eggs and you don’t need any milk or cream at all.
Laila’s Pantry, who boasts more than 400,000 followers on TikTok, says that making ‘super fluffy’ scrambled eggs is very simple, as you only need a handful of ingredients rather than overloading them.
And although many people choose to add a splash of milk or cream when they’re whisking up the eggs, this might not actually be the best idea. This is because dairy product can affect the taste of the eggs in a negative way, or it can end up making them watery, rubbery and generally just unpleasant.
Instead, Laila has recommended adding an even simpler, free ingredient: water. It might sound strange, but because the water turns to steam in the pan, it helps cook the eggs gently without overdoing it.
How to make the perfect scrambled eggs
Laila’s recipe for scrambled eggs couldn’t be any simpler. It all begins with cracking two eggs into a bowl, and making sure you whisk them properly so that there are absolutely no white streaks remaining.
This is what’s going to help with that fluffy yet creamy texture. Laila explained: “When you whisk it properly, it’ll be completely homogenous and means you won’t get any streaks of white in your scrambled eggs.”
Then she moved on to her ‘biggest tip’ which is to add a splash of water to the bowl. She said: “When you cook the eggs, the water turns into steam which then makes your scrambled eggs super fluffy and light.
“Some people like using cream or milk. I don’t really like that because then you get that cooked dairy taste in your eggs and it’s never really appealed to me.”

Then, add a ‘good amount’ of salt and mix this in too, which Laila says is crucial and shouldn’t make your eggs watery or rubbery.
Then it’s time to cook. Put some butter in a pan and set it over a low heat, which will prevent the egg from cooking too quickly and tasting unpleasant. Move the eggs around gently with a silicone spatula, starting on the outside where the eggs should be getting opaque as they cook.
The next step is optional, but Laila then added a touch of gorgonzola cheese. When the eggs are around 90% done, take them off the heat but continue stirring for 30 seconds to finish them off.
Serve on toast and add whichever seasonings you like – Laila went with chilli flakes, picked shallots and fresh dill.
