Summer is the season for garden parties, picnics and get-togethers with friends. If you’ve ever hosted a party you know that a bowl of fresh guacamole is a real crowd pleaser. It’s vegan, gluten and dairy free and also incredibly delicious – especially if you know what to add to take it up a notch.
I have been making guacamole for years and there are a few things I wouldn’t dream of making it without – finely chopped red onion is one, minced garlic is another and fresh coriander is a third. However, there is one secret ingredient I add every time that gets my guacamole complimented by everyone who tries it – and that is cumin.
This earthy herb adds a lovely depth of flavour, and smooths out the sharpness of the lime juice.It is so delicious, so easy and a must try for your next soiree.
Here’s how to do it
Ingredients
- Four large ripe avocados
- One small red onion, finely chopped
- Freshly squeezed juice of one lime
- One tsp of minced garlic
- ⅓ cup of chopped fresh coriander
- One teaspoon of ground cumin
- Salt and pepper to taste
Method
- Add the avocados and lime juice into a large bowl
- Mash the flesh of the avocados using a fork or potato masher.
- Add in your chopped onion, garlic, cumin and salt and pepper.
- Stir with a fork until combined, then add your coriander and stir to combine again.
- Taste for seasoning and serve.
If you aren’t serving straight away, cover your bowl with plastic wrap and push it down so the wrap lies flush against the guacamole.
This will create a seal and stop it going brown, so it can be stirred in the fridge until you’re ready to eat it.
