Flour is a staple cupboard ingredient but often escapes the shopping list when needed.
Fortunately for those hoping to make pancakes on a slow weekend morning, a worthy alternative is probably already in the pantry.
The team at Love Fresh Berries has shared a quick and easy American pancake recipe that uses sweet yet slightly tart blueberries to cut through the fluffy pancake batter. And there’s no need for plain flour.
This recipe for flourless pancakes uses porridge oats to bulk out the dry matter in the mixture. Combined with milk, bananas, and cinnamon for flavour, the batter is very quick to make.
You can even whip the mixture up in advance for even speedier pancakes later in the week.
Flourless pancakes recipe
Ingredients (for two people)
- 50g blueberries
- 150ml milk (dairy or unsweetened almond)
- 100g oats
- One tablespoon of baking powder
- Pinch of salt
- Half a teaspoon cinnamon
- One ripe banana
- One teaspoon of vanilla extract
- One teaspoon of coconut milk
- Honey or maple syrup to serve
Method
This recipe calls for oats instead of plain flour, but you will need to ground the porridge oats down to a fine flour-like consistency before adding them to the batter.
Add the oats to a blender or food processor and blitz to a fine grain, then add the mixture to a large mixing bowl. Combine with the baking powder, salt and cinnamon.
Wash and dry the blueberries before slicing them into halves, or just roughly chop them. Peel the banana and break it up into chunks before adding it to the blender with the milk and vanilla extract. Blend until smooth.
Add the wet mixture from the blender to the dry ingredients in a bowl, then stir to combine. Finally, fold in the blueberries to distribute them evenly without mushing them up.
Heat the coconut oil in a large non-stick frying pan. Portion a few tablespoons of the pancake batter into pools in the pan and cook for a few minutes.
Flip the pancakes over to cook for a minute more on the other side or until the pancakes are cooked through. Avoid making them too golden or the pancakes will crisp up on the edges. Repeat with the remaining mixture, then stack the American pancakes up on two plates and finish with a drizzle of honey or maple syrup, plus any leftover blueberries.
