‘Green goddess’ sauce has taken social media by storm, whether as a salad dressing or in curries and pasta dishes. This sauce is both delicious and healthy, and now vegan food influencer Gigi Grassia has shared a recipe for green goddess beans, which is packed full of protein and fibre.
Gigi’s recipe has delighted her followers, with one commenter writing: “Oooo my days! This was amazing! The taste was out of this world! So easy to make and so quick! We also had the remainder cold the next day and that was equally fantastic.” While another added: “Made this today. Absolutely delicious!”
Method
Heat some olive oil in a non-stick pan over low-medium heat, then add in the onion, garlic, and ginger and cook until the onions are translucent.
Once the onions are translucent, add the leeks and spinach and cook until the leeks are completely soft and the spinach wilted, adding a splash of water if needed.
While these cook start making the ‘cheesy’ sauce by blending the yoghurt, miso and nutritional yeast. Then, set aside.
Transfer 2/3 of the cooked veggies to a blender and blend with silken tofu, nutritional yeast, and miso until creamy. Add the mixture back to the pan and pour in the butter beans, stirring to warm through.
Serve topped with the cheesy sauce, lemon juice, a drizzle of oil, black pepper and basil. To complete the meal, add some rice or sourdough bread.
