'Delicious' microwave banana pudding recipe is a big hit for hundreds of people


Fans of the banana pudding have said the “delicious” recipe is one they are keen to make again.

Denny Lee said he “loved this pudding” while another food enthusiast said her boys “love” this “quick pud”.

She said online: “My boys love this! This is our number one go-to quick pud! Smash it together from start to finish in less than 15 minutes… comes out so tasty!”

Given four stars, and 140 ratings on BBC Good Food, the microwave banana pudding is described as a “super-speedy dessert” that can be served with ice cream or yoghurt.

Here’s how to make the delicious microwave banana pudding recipe that is ready in just 20 minutes.

Microwave banana pudding recipe

100g butter, softened, plus extra for greasing
Two ripe bananas
100g light muscovado sugar
100g self-raising flour
Two tsp ground cinnamon
Two eggs
Two tbsp milk
Icing sugar, toffee sauce and ice cream, to serve, if you like

Method

Put the butter in a one-litre baking dish and microwave on high for 30 seconds to one minute, until melted.

Add one-and-a-half bananas, mash into the melted butter, add the sugar, flour, cinnamon, eggs and milk. Mix well.

Slice the remaining banana over the top, then return to the microwave and cook on high for eight minutes until cooked through and risen.

Serve warm, dusted with icing sugar, if you like, with a drizzle of toffee sauce and a scoop of ice cream.
