Chef’s ‘genius’ silky smooth soup has just three-ingredients – one of which is olive oil


Soup is a loved dish by many, after all, there are so many vegetables that can be added to it to give incredible flavours.

While the majority of people tend to buy soup from supermarkets, cooking it from scratch isn’t as hard as it seems.

Take this three-ingredient soup recipe, for example, you most likely have these ingredients in your kitchen cupboard.

TikToker Kathleen Ashmore, who regularly shares her favourite recipes on social media, has posted a simple soup recipe created by chef Paul Bertolli.

She captioned the video that received over 20,000 favourites: “Paul Bertolli’s genius three-ingredient cauliflower soup.”

Kathleen said: “This soup only uses three ingredients, including olive oil – it makes no sense. I am talking about the genius three-ingredient cauliflower soup by Paul Bertolli.”

The three ingredients are olive oil, onion and cauliflower. She pointed out that this soup is all about technique.

To make the soup start by cooking one large onion on low for about 15 minutes. While the onions are frying, Kathleen fries off some almonds to top the soup with – but this is an optional step.

To the onions add in one head of cauliflower, half a teaspoon of salt and half a cup of water or stock, but doing so will make this dish more than three ingredients.

Then just cook those ingredients for 15 to 18 minutes. After, add in five cups of water (or stock), bring to a low simmer and cover for an additional 20 minutes.

Kathleen said: “This low slow cooking of the cauliflower makes it silky smooth without any addition of cream.”

Plating up the soup, the cook said: “I like to top it with fried almonds, a little bit of thyme, olive oil and pepper. So good.”

The soup looked incredibly creamy and delicious and the addition of almonds and herbs on top made it look stunning.
