Chef's ‘all in one’ sticky ginger cake is a delicious spring treat – ready in 40 minutes


Ginger has anti-inflammatory properties and digestive benefits, plus it tastes delicious when mixed into a cake.

While it may not be the healthiest way to enjoy this superfood ingredient, chef Lisa Marley’s (@lisamarleychef) recipe is a quick and easy way to use it.

Sharing her formula exclusively with Express.co.uk, Lisa explained that one of the best bits of her “sticky ginger cake” is that it’s an “all in one” recipe.

Made with a simple blend of just seven ingredients, including two affordable kinds of ginger, the cake makes for the perfect spring treat.

What’s more, it’s ready in under an hour with a short cooking time of 35 to 40 minutes.

Method

Preheat the oven to 180C (350F) and grease a 1lb loaf tin.

In a mixing bowl, combine the self-raising flour, caster sugar, bicarbonate of soda, baking powder, and ground ginger.

Mix the plant milk and apple cider vinegar in a separate bowl, then add the vegetable oil.

Gradually pour the wet ingredients into the dry ingredients and mix until well combined.

Pour the batter into the loaf tin and bake for 35-40 minutes or until a toothpick inserted in the centre comes out clean.

Let the cake cool in the tin briefly before transferring it to a wire rack to cool completely. Garnish with the chopped stem ginger and spoon over the syrup
