Cauliflower will taste better with 1 added ingredient

Vegetables can be boring a lot of the time, and trying to convince people to eat them can be a mammoth task. Some, like cauliflower, have a very subtle flavour, almost to the point where it can taste bland if boiled.

If you’ve been struggling with adding flavour to your cauliflower, chef and TikTok creator Stephen Beaddie shared a foolproof recipe that will take your veggies to “the next level”. You’ll never need to suffer from boring boiled cauliflower again. Stephen said: “This is how you take your cauliflower to the next level. We are going to roast this bad boy up.”

Not only does Stephen change the cooking method to roasting, which will help bring out the cauliflower’s natural earthiness and nutty flavour, he added one ingredient to the mix as his secret weapon. His choice of sauce is harissa rose paste.

Rose harissa paste is a North African and Middle Eastern condiment traditionally made from a spicy blend of roasted red peppers, chilies, garlic, and spices like cumin and caraway, with the addition of dried rose petals or rosewater.

The chef did warn that harissa rose paste can be expensive, but the flavour is worth the pennies. He said: “This is expensive but it is delicious – complete flavour bomb.”

To help bring out a different flavour to the cauliflower, Stephen urged home cooks not to be afraid of roasting the vegetable at such a high temperature. At the end you want to add a drizzle of honey and lemon, which he said will “brighten everything up”.

Stephen’s video has already been viewed over 47,500 times, receiving 603 likes and nine comments. Doktorbakes said: “Making this today. I love cawliflower [sic]. Thank you for the recipe.” Sandsbigalow simply wrote: “Lush.”

Roasted Cauliflower

Ingredients

  • One cauliflower
  • One big tbsp harissa rose paste
  • Two tbsp olive oil
  • Pinch of salt
  • Light drizzle of honey
  • Juice of half a lemon

Method

Preheat the oven to 220°C. Break the cauliflower into florets, keeping the inner leaves. Roughly chop the leaves and add them to the tray. Mix the cauliflower with harissa paste, olive oil, and salt.

Spread evenly on a roasting tray. Roast for 10 minutes, then remove and mix well. Return to the oven for another five to 10 minutes, depending on the size of the florets, until golden.

Finish with a drizzle of honey and a squeeze of lemon juice before serving.
