Best barbecue dessert is ‘ambrosia’ you’ve probably never heard of

There are some foods that have the ability to take you right back to childhood. For me, one of those foods is a delicious dessert called ‘ambrosia’. If you’ve grown up in the UK, I’m not sure you will have ever heard of it, but ambrosia is a true Kiwi classic.

Named after the food of the Gods, this sweet treat is nothing short of spectacular and the best part is, it involves exactly zero cooking. The whole thing comes together in minutes, feeds a crowd and keeps well in the fridge. It was a staple at childhood barbeques and parties but it’s still just as delicious now.

The original recipe calls for yoghurt, cream, marshmallows and tinned fruit as well as milk chocolate. However, I like to add whatever takes my fancy – fresh fruit, different flavours of yoghurt and whatever other berries I think would work.

If you want a quick, easy dessert you can slap together in seconds and get a million compliments for at your next party, then ambrosia is the dish for you.

Here’s how to make it.

Ingredients

  • 400mls whipping cream
  • 375mls fruit-flavoured yoghurt – raspberries or strawberries work best
  • 425g of canned berries – the recipe calls for boysenberries, but I used a summer fruits mix
  • 220g marshmallows cut in half
  • 50g grated chocolate
