Giving into your sweet tooth doesn’t always have to leave you feeling guilty, and this chocolate pudding recipe means you can whip up a sweet treat that’s actually good for you in no time at all.

Packed with polyphenols, an anti-inflammatory that’s good for your brain and heart health and commonly found in plants, berries, vegetables, and dark chocolate, this pudding proves that indulging in a sweet treat can in fact be a healthy choice.

The recipe posted on TikTok by Zoe contains plant protein from silken tofu, which it describes as “a treat for both your gut microbiome and your taste buds”.

While traditional mousse recipes are made with eggs, caster sugar, cream, butter, and sugar, this one forgoes almost all of them.

Instead, this formula relies on the natural creaminess of the tofu, which is essentially condensed soya milk that’s pressed into a solid block.

It is worth noting that this recipe requires silken tofu, which differs from film tofu. Silken tofu is well-placed in creamy deserts and can even be used as a base for soup, thanks to its delicate and jelly-like consistency.

The product is easy to find in most supermarkets including Sainsbury’s for £1.75, or £1.85 at Ocado and Tesco.

Meanwhile, dark chocolate boasts its own health benefits. A 2011 study highlighted by BBC Good Foods finding dark chocolate to be richer in protective antioxidants than both blueberries and pomegranates.

Method

Break the dark chocolate into small pieces and place into a heatproof bowl over simmering water, or in the microwave. Stir the mixture until smooth.

Add the silken tofu, melted dark chocolate and cocoa powder to a blender or food processor, blending until smooth and creamy. If you prefer a sweeter taste, you can add maple syrup at this stage and blend again.

Transfer the pudding to serving bowls and drizzle with extra virgin olive oil, a sprinkle of flaky sea salt. Add your choice of toppings such as chopped nuts, frozen berries or an extra grating of dark chocolate.

Indulge immediately or refrigerate for a firmer texture before serving.
