Tomato soup is the ultimate comfort dish that is quick and easy to make. Nothing beats a homemade soup, and the next time you plan to make a bowl then there are two key ingredients that you must not miss out. Sam Merrit the founder of food blog Sugar Spun Run, shared her recipe for a “velvety smooth” tomato soup which is “beautifully balanced”.
In the recipe there are two stand out ingredients that people might shy away from adding to their soup or perhaps have never even thought about using. The first one being sugar. “Adding sugar doesn’t make this soup sweet; instead, it counteracts the acidity of the tomatoes and is essential for a balanced flavour,” she writes.
Her next “secret ingredient” is a household staple that many might be surprised about.
She added: “It may be unexpected, but this ingredient is a key player in any good tomato soup recipe. While cream and sugar are good tools for counteracting acidity, too much can throw off the delicate balance of flavour and even overpower the robust tomato flavour that we actually want! A pinch of baking soda balances things beautifully.”
Now, home cooks don’t have to worry about questioning how much of the two ingredients they should add to their tomato soups, because the food expert shared her incredible recipe for everyone to try out.

- 4 tablespoons unsalted butter
- 3 cups (400g) sweet or yellow onion, diced
- 1 1/2 tablespoons (10g) minced garlic
- 1 1/2 tablespoons all-purpose flour
- 2 28 oz (793g) cans whole peeled tomatoes
- 2 cups (473 ml) chicken broth
- 1/4 cup finely sliced basil
- 2 tablespoons granulated sugar
- 1/4 teaspoon table salt
- 1/2 teaspoon ground black pepper
- 1/3 cup (80 ml) heavy cream
- 1/4 teaspoon baking soda
- Shredded or grated parmesan cheese for topping
