Pan-frying is a popular way to cook salmon, but if you want to make it even more delicious, then there’s one method you should try. One of Mary Berry’s recipes calls for ditching the frying pan and baking the salmon instead, spreading a delicious topping on beforehand. You only need a handful of ingredients too, making it the perfect quick and easy meal.
This simple recipe, which is ready in less than 15 minutes, involves topping your salmon fillets with a flavourful herb crust. Then, when it’s baked in the oven, it becomes crispy and golden, yet still lovely and juicy on the inside.
It’s great if you’re planning a big dinner with friends or family, as you can prep it ahead of time, meaning all there is to do is pop it in the oven when your guests arrive.

Method
Preheat the oven to 200C. Season both sides of the salmon fillets with salt and pepper and place on a greased baking sheet or roasting tin.
Mash the cream cheese with the garlic, salt and pepper and lemon rind. Divide into six portions and spread on top of each salmon fillet.
Mix the breadcrumbs, parmesan and parsley in a small bowl and season with salt and pepper. Sprinkle on top of the cream cheese mixture and dust with paprika.
Bake in the oven for about 15 minutes. To tell when the salmon is done, it will have changed from translucent to an opaque pink.
Sprinkle some chopped parsley on top and serve immediately.
