When you need a quick and easy dinner, you can’t go wrong with a slow cooker meal. These fantastic gadgets are ideal if you’re going to be out for the day, but still want something delicious waiting for you when you come home, with very little effort involved.
Slow cookers are known for their hearty meat-based dishes, but did you know you can cook pasta dishes in them too? One recipe creator Nate, known as Bored of Lunch, recently shared a delicious Cajun inspired pasta dish made in the slow cooker that is ‘really easy’ yet so satisfying. You’ll only need a handful of cupboard staple ingredients to make it as well, so it’s an affordable option too.
In the video’s caption, he said: “This is such an easy midweek dinner, low effort to throw together and costs only £2.94 per portion.”
And people in the comments who had tried it out for themselves were full of praise too, with some suggesting simple tweaks. One person said: “It was delicious! I added sun-dried tomatoes too.”
Another commented: “This looks DIVINE,” while a third wrote: “This recipe looks delicious and so easy to make! Definitely trying it for my next midweek dinner.”
Here’s everything you need to make it at home.
Method
Add all the ingredients to the slow cooker except the peppers, parsley, cheese and pasta. Cook on high for three to four hours on the high setting, or seven hours on the low setting.
When the time is up, cook your pasta according to the packet instructions. Drain it, then stir it into the slow cooker along with the chopped peppers and two tablespoons of soft cheese. Give everything a good mix until it’s nice and creamy.
Sprinkle grated mozzarella or cheddar over the top, then place the slow cooker pot without the lid under the grill for about five minutes, until the cheese is melted. Serve immediately and enjoy.
