Scrambled eggs make for a delicious breakfast, lunch, or even the rare dinner. Despite being quite a popular dish, it can sometimes taste a little plain, especially if you only add salt and pepper. However, adding just one simple ingredient can spice the eggs up, adding that extra layer of deliciousness to your brunch.
Food writer and chef Verna Gao, who posts on Instagram under the handle @vernahungrybanana, recommends cooking scrambled eggs in chilli oil. When making this, Verna pairs it with avocado toast and uses homemade chilli oil, but if you don’t have time to make an oil from scratch, store-bought will work, too.
Posting a video of her egg recipe, Verna writes: “This pairing is elite, and this is a PSA to all the baddies out there not currently cooking eggs in chilli oil—you should!”
“For a perfect soft scramble, I liked to get my frying pan very hot and then add the eggs. As soon as the eggs are in I turn off the heat so the residual heat can do the cooking but also prevent any over cooked eggs at the end. Obviously adjust to your preferred egg texture but it’s super easy and a hit every time.”
Verna’s followers were quick to comment on her video, with one writing: “Saw this yesterday and had to make it today. It is HEAVENLY!”
Another added: “I just tried this (with basil instead of green onion) and the way the egg bubbled up as soon as it hit the hot chili oil was so satisfying. Yum!”
While a third shared some more advice for others making these scrambled eggs: “I just made this for the first time…it was soooo good! Although, I did learn some info. I used way too many eggs for two slices of bread.
“I used too much chili oil but luckily bc there were 4 eggs it cancelled out how spicy it could have been so for people who are kind of noobs to spice it was great!
“I also learned that if you want the eggs to be more yellow instead of brown-looking, do not mix them as much. You probably do want to just lightly fold around the edges while not touching the center because the color had much to be desired if you’re wanting to take pretty pictures, but all in all, it was so tasty!! Now I have a new breakfast recipe!!”
