Potatoes won’t be soggy with 1 simple cooking tip

Soggy potatoes can ruin your meal but with this simple tip, you’ll be able to ensure they are perfectly crispy every time. Cooking at home can be tedious – you might have experimented with different ways to make your potatoes crispy but keep finding they’re not turning out quite as you’d hope.

BBC Good Food says you can make soggy potatoes a thing of the past with this clever recipe. It promises: “You’ll end up with roasties that have a fluffy middle and golden, crisp exterior.”

You’ll first need to add oil to your baking tray and add to the oven to heat up.

After this, bring a pan of salted water to the boil, pour in your potatoes and leave to simmer for eight to 10 minutes.

Next, drain the potatoes and leave them to steam-dry for 15 mins, then return the potatoes to the pan, put the lid on and gently shake to lightly rough up the edges.

Take your tray out of the oven and add butter to the hot oil, place your potatoes on one by one.

You should then put lemon thyme amongst your potatoes and add garlic.

The final and crucial tip for perfect crispiness is to sprinkle over the sea salt and return to the oven to roast for 1 hr, turning every once in a while, until golden and crisp.

You can add any seasonings or flavours you like to your potatoes depending on which flavours will complement the rest of your meal.

These potatoes will be perfect with chicken and vegetables as part of a roast dinner or even with fish for a lighter meal.

To create these delicious potatoes you will need:

  • 4 tbsp rapeseed oil

  • 1½ kg Maris Piper potatoes cut into quarters, peelings reserved

  • 50g butter

  • ½ bunch of lemon thyme

  • 6 garlic cloves, lightly bashed

  • 1 tbsp sea salt
