A nice stack of pancakes is a breakfast treat that for many cannot be topped. However, for the pancakes to hit perfection, they must have that fluffy and light texture that can be hard to achieve. Fortunately, there is one thing that every pancake enthusiast can do to ensure the next time they make a stack that is their best yet.

Homemade pancakes aren’t too difficult to make, and you can even buy ready-made batter that makes things even easier. However, if you are going down the homemade route, you’re most likely have your own trusty recipe – but with this one small tweak will make your pancakes “100 times better”.

American chef and food writer Alison Roman is best known for her viral recipes. Food blog, The Kitchn reviewed Alison’s “perfect, crispy pancakes” recipe and named it the best pancake recipe by far while discovering that the “easy secret to making them [pancakes] extra fluffy” is adding in melted butter last.

It reads: “If you’re making homemade pancakes, the very last thing you should stir into your batter is melted butter. Since learning this from Roman’s recipe, my pancakes have gotten 100x better.”

What this does is it “helps prevent the butter from seizing in the cold dairy”.

Despite being considered some of the best pancakes out there, it’s still just pancakes, so thankfully, the recipe is straightforward to follow.

Ingredients

  • 2 cups all-purpose flour
  • 3 tablespoons sugar
  • 1 1/2 teaspoons baking powder
  • 1 1/12 teaspoons baking soda
  • 1 1/4 teaspoons kosher salt
  • 2 1/2 cups buttermillk
  • 2 large eggs
  • 3 tablespoons unsalted butter, melted
  • Coconut oil for pan (vegetable or canola oil can be used as well)
