With more and more Brits struggling with the increasing costs of living, the weekly takeaway may be going the way of the dinosaur for some. However, just because you aren’t ordering takeaways doesn’t mean you can’t enjoy recreating some of their dishes in your own home.
One foodie influencer recently shared a delicious recipe for crispy chilli garlic mushrooms that will taste just as good as ordering from your local Chinese restaurant — and it’s healthier, too. Sharing her recipe, Serena Patel, who posts on Instagram as @onserenasplate, wrote: “These are a must-order dish when I’m at an Indo-Chinese restaurant, so here’s a healthier fakeaway recipe for them, with crispy air-fried mushrooms!”
Method
Start by mixing together the cornflour, red chilli powder, ground corriander, ground cumin, garlic granules, ground black pepper and salt in a large bowl. Then slowly add in the water and mix unill you have a thick & smooth batter, add more water as needed.
Wash the mushrooms and pat them dry before adding to the batter. Then mix and ensure the mushrooms are well coated. Spray an air fryer tray with a little oil, lay out the battered mushrooms (leave a gap between them, cooking in batches if needed).
Spray with a little oil on top, then air fry on 180 for 15 mins or till golden and crispy.
While the mushrooms cook, chop the onions into large chunks, keeping the spring onion greens separate. In a small bowl, prepare the sauce by mixing the dark soy sauce, sweet chilli, sriracha, honey and a splash of water.
Add the chopped red onion & spring onions whites to a hot wok with a little oil and light soy sauce. Cook on medium to high heat for a minute. Then add the minced garlic and ginger, stir, and cook for another one to two minutes.
Mix in the prepped sauce and simmer for one minute before mixing in the crispy mushrooms and half the spring onion greens.
Heat through for a minute and garnish with the remaining spring onion greens. Serve with noodles, rice, or on its own.
