Chessington mum Samantha Donnelly has thousands of followers online and has shared her simple ice cream recipe. She said: “I love that this ice cream is so easy to make. You don’t even need to stir it to stop it from crystallising. The ingredients make it nice and creamy on its own, and at 32p a portion, it’s an easy sweet treat to make when the weather is hot.
“When the kids need to chill out and relax in the garden, they love helping themselves to this easy ice cream recipe. It’s easy enough for them to make on their own and great for a snack to cool down with.” What’s more, it’s super versatile and you can adapt it however you wish, including with vanilla extract.
Two-ingredient ice cream recipe
Ingredients:
One can of condensed milk
One tub of double cream
Optional flavouring:
Vanilla extract
Raspberry dessert sauce
Chocolate
Method:
In a large bowl, whisk the double cream until it becomes thick. It’ll be ready when peaks have formed in the cream, or the cream sticks to the whisk when you lift it out of the bowl.
Once the cream has reached the desired consistency, pour in the condensed milk and mix thoroughly until everything is well combined.
Pop the mixture into a freezeable container with a lid and leave it to freeze. It can take around six hours, but if you can, freeze it overnight.
Sam said: “It’s so easy to personalise this recipe and make your favourite ice cream variations. For a really easy option, try the caramel sweetened condensed milk, it’s great for a toffee flavour and usually costs the same as the plain version from a supermarket.
“Or if you want to create your own raspberry ripple, you can use raspberry dessert sauce. It’s really easy to make and takes just one extra step.
“Make the mixture as usual, and then when you’re ready to freeze it, put a third of the mixture in the freezing tub. Then, squirt a thin line of raspberry dessert sauce up and down the mixture to create your layer of sauce. “
Repeat this process with the rest of the mixture, so that you have layers of ice cream and raspberry sauce, then freeze as usual.
