With Mary’s tips, you can create the perfect crispy-skinned potatoes that are creamy on the inside, making them a comforting and satisfying dish everyone will love. The game-changing topping she suggests adding is sour cream which is a popular addition to baked potatoes. You can enhance their taste even more by adding some spring onions which add a complimentary flavour to your meal.
First you need to make sure you’ve baked the perfect potatoes – preheat your oven to gas mark seven and cook for one hour until soft in the middle.
While they are cooking you can begin to prepare your filling, says Mary.
Then, you’ll need to slice each baked potato in half and scoop out the soft potato into a mixing bowl.
Add the milk and butter to the scooped potato and mash with a fork until smooth.
She says you should sauté the chopped spring onions in a dash of vegetable oil until they are soft.
Then, you should mix this into the potato along with the soured cream before seasoning and sprinkling with paprika.
After adding your toppings, spoon the filling back into the potato skins and place the filled potatoes in a roasting tin, drizzle with olive oil, and put back in the oven for 15 minutes or until the skins are crisp.
You may wish to add a garnish to your potatoes – if you do then parsley would make the perfect addition.
This recipe won’t add any more time to your baked potato meal than you’d usually spend cooking the dinner time classic but by making these small changes you can completely transform the meal.
