Many of us are lucky to have leftover food after the holidays are done, but instead of throwing it away consider making a delicious stew instead.
Jamie Oliver’s chicken stew and dumplings are incredibly easy to make and you only need simple ingredients you likely already have in your kitchen.

This is the perfect recipe to save for Boxing Day in case you have any leftover chicken and want to make a mouth-watering lunch.
However, this is a fantastic meal to make any day this winter as it is hearty and delicious so will be sure to impress any family you have over around Christmas time.
Method
To begin, strip any meat you can off the chicken carcass and then place it, along with the bones, in a large pan.
Use a rolling pin to smash the carcass and bones up and then cover with one litre of water. Bring the water to a boil and let it simmer for at least 30 minutes, then skim any scum which reaches the surface.
Meanwhile, chop the bacon into fine slices and place in a large casserole pan on a medium heat along with some olive oil.
Peel and chop up the onions, carrots and potatoes (or celeriac) into two-centimetre cubes and add to the casserole pan. Cook the vegetables for 10 minutes and stir regularly.
Cut the mushrooms in half and add the mushrooms to the pan. Then, add the leftover chicken and plain flour.
Once the chicken carcass is done cooking, pour the stock through a sieve straight into the casserole pan. Pour more water into the pan if needed and let it simmer for 20 minutes or until thickened.
Meanwhile, make the dumplings. Add the self-raising flour and a pinch of salt into a mixing bowl. Grate the cold butter into the bowl and rub the ingredients together until they resemble breadcrumbs.
Add 100ml of cold water to the bowl and knead until it resembles a ball of dough. Divide the dough into 12 pieces and roll into balls.
Once the time is up, add a splash of water to the stew, and season if needed. Pour the stew into an ovenproof pan and place the dumplings on top.
Place the stew in the oven and bake at 190C for 30 minutes or until the stew is hot and the dumplings are fully cooked.
Take the stew out of the oven and your mouthwatering stew is now ready to serve.
