Jamie Oliver’s sticky lamb chops recipe is a breeze to make, turning out beautifully tender and caramelised in no time. With just five ingredients, it’s is a perfect choice when you want something fast, nutritious, and packed with fresh flavours.
The chef shared this dish from his cookbook ‘5 Ingredients – Quick & Easy Food’ on his official website, where he classified it as “not too tricky” to prepare. This recipe includes a side of heritage carrots, but you can accompany it with a pea salad, couscous or mashed potatoes, too. When made as per the instructions, this recipe serves two and is ready in just 15 minutes, from start to finish.

Ingredients
Six lamb chops, French-trimmed (600g total)
200g mixed-colour baby heritage carrots
Eight cloves of garlic
Three oranges
Half a bunch of fresh thyme (15g)
Method
Start by scoring the fat on the lamb chops, then season them generously with sea salt and freshly ground black pepper.
Arrange the chops in a row, fat side down, in a large, shallow casserole dish set over medium-high heat. Allow them to cook for five minutes to render the fat and crisp it up.
Next, prepare the baby carrots by trimming them and halving any larger ones before adding them to the pan alongside the unpeeled garlic cloves. Turn the carrots occasionally to ensure even cooking.
Afterwards, gently flip the lamb chops onto their sides, cooking for two minutes on each side or until golden brown on the outside but still pink in the centre.
While the lamb is cooking, use a speed-peeler to peel thin strips of zest from one orange. Add the zest to the pan along with some sprigs of thyme, and toss everything together for about 30 seconds to allow the flavours to infuse.
Once the chops are cooked, remove them from the pan and set them aside to rest. Squeeze the juice from all three oranges into the pan, letting it bubble and reduce until it becomes sticky.
Finally, return the lamb to the pan along with its resting juices, give everything a quick toss, and it’s ready to serve.
