Fish is a great addition to your weekly meals, and salmon is one of the healthiest fish to eat regularly as it’s packed with heart-healthy omega-3 fatty acids and antioxidants. However, just having a plain piece of seared, baked, or grilled salmon can get boring quickly.
For a “simple” way to cook this fish to achieve great flavour and a moist, flaky texture, Niki Kingsmill took to her Instagram page @thestarvingartiste_ to share her “go-to” recipe. Captioning the video, Niki said: “Fish is one of the best things to cook because it is so easy and requires minimal additions to taste great. This salmon has only salt and one special secret ingredient: mayo!
“When I am feeling like a simple salmon recipe – this is my go-to. The mayo gives it a little flavour kick while keeping it incredibly moist.”
Spreading mayonnaise on fish before cooking it may seem odd, but mayo is mostly oil flavoured with lemon juice, salt, and sometimes mustard and herbs – exactly the sort of ingredients you might ordinarily coat fish with before cooking it.
This recipe couldn’t be any easier, as it involves just three simple steps. Start by salting the fish before spreading a thin layer of mayonnaise across each fillet.
Niki pointed out that she used Hellmann’s mayonnaise, but any will do the job.
Bake in the oven at 180C/160C Fan/Gas Mark 4 for 15 to 17 minutes. Niki said: “I cooked mine for 17 and should have done 15 for a perfectly pink centre. I like mine a bit rare.”
This salmon can be served with a range of different sides, like creamy mashed potatoes and delicious tenderstem broccoli. Niki opted for latering your salmon on a kale salad.
