When you’re in need of a quick yet tasty lunch or side dish, you can’t go wrong with potato salad. The light and creamy concoction is ideal for serving up at summer BBQs or for simply enjoying on its own when you don’t have a lot of time to cook.
However, it’s no surprise that it’s not the most exciting meal. So if you want to add an extra dimension of flavour and crunch to your potato salad, there’s one thing that you have to try. Food content creator Mariam on TikTok says you can make your potato salad taste ‘delicious’ if you smash down your spuds after boiling them, making them extra crispy.
In a video showing how to make them, Mariam said: “Let me tell you something. This crispy potato salad was something else. I love all sorts of potato dishes, so when I tried this one, I was fighting every urge to not finish it all off.”
Crushing the potatoes down after boiling and coating them in oil and seasoning before baking them in the oven will add an extra crunch to your salad that’s way more exciting than drab boiled spuds.
People in the comments were in firm agreement that the dish looked so tasty, with one person writing: “Perfect as a side for grilled chicken!!! Can’t wait to try this.”
“Omg I need to make some asap,” wrote another, while a third said: “Looks delicious.”
Here’s everything you need to make this recipe.
Method
Boil baby potatoes until fully cooked through, which should take around 15-20 minutes, while you prehead the over to 220C. Then, drain them and transfer into an oiled tray.
Using the bottom of a cup or jar, smash the potatoes down so that they’re flat. Drizzle over some olive oil, season with salt and pepper, and cook in the oven for around 25 minutes until they are crispy and golden.
Into a large bowl add mayo, yoghurt, seasoning, onion, gherkins, chillies and jalapeño and mix it all together. Give it a taste, and adjust according to your preference if needed.
Once the potatoes are crispy add into the bowl, mix and serve.
