Pork chops are great because they’re relatively budget-friendly, tasty and one of the quickest meats to cook, but unfortunately, they can end up a bit dry sometimes. If you’ve cooked pork chops and ended up with something dry, tough, and flavourless, you’re probably using the wrong seasoning.
When cooking pork chops, most people tend to just season the meat with salt and pepper, and while that can be enough in some cases, there is a better ingredient to use. Charlie Torgerson, executive chef and owner of Charlie T’s Foods and chef partner to the National Pork Board, claimed that Worcestershire sauce is a must when it comes to making the meat tastier and juicier. Worcestershire sauce is that one liquid ingredient that can totally transform your pork chop recipes and make them absolutely delicious.

How to make pork chops juicier and tastier
According to Charlie, you should absolutely marinate pork chops in Worcestershire sauce for upgraded flavour and texture. He told Tasting Table, “Worcestershire sauce acts as an instant umami booster that brings massive flavour to pork chops by introducing depth from fermented anchovies, molasses, tamarind, and garlic.”
This adds savoury, tangy, and slightly sweet notes that enhance the pork. In addition to improving its taste, the acidic vinegar in the sauce “tenderises the meat for a juicy, melt-in-your-mouth texture”.
Aside from the Worcestershire sauce keeping your pork chops juicy while they cook, it upgrades the outer layer as well. The chef explained, “The natural sugars from the molasses and tamarind also help form a beautiful, deeply caramelised crust when the pork hits the heat.”
Plenty of pork chop marinade recipes suggest letting your chops sit in a sealed bag in the fridge for six to eight hours to really soak up all those delicious flavours. That said, you’d be pleasantly surprised to know that just an hour can do a pretty great job of getting that flavour into the meat.
How to pan-fry pork chops
Aside from using Worcestershire sauce, pork chops really shine when you give them a good sear. This creates a delicious, textured crust while caramelising all those natural sugars in the meat. The chef explained, “When pan-frying a pork chop, I start at a lower heat, then finish it on high heat to create a crust and caramelisation.”

How else can you marinade pork chops?
Worcestershire sauce isn’t the only ingredient that adds amazing flavour when it comes to creating an amazing pork chop marinade. Thanks to its wonderfully complex taste, it pairs beautifully with lots of other ingredients to create something truly special.
If you want to balance out the savoury pork and that deep umami kick from the Worcestershire, the chef suggests mixing in some fruit, honey, brown sugar, apple cider, and maple syrup to add a lovely sweetness.
Charlie added, “Fresh garlic, shallots, or sauteed onion rings are great aromatics that bridge the savoury gap perfectly.” You can also strike a nice balance between the sweetness of Worcestershire and other flavours by mixing in some spicy mustard, hot sauce, or a little soy sauce to bring in that spice and tang you’re looking for.
