How to make 'healthy and delicious' pancakes that are high in fibre – recipe


There’s nothing like a freshly cooked stack of pancakes on the weekend but sometimes it’s good to switch things up.

Those looking for a unique twist on this breakfast staple can swap out just a few ingredients to create an even healthier alternative.

Sharing their recipe with Express.co.uk, the team at the Groovy Food Company claimed that their formula makes “easy and delicious” pancakes which contain “three-quarters of our daily recommended fibre intake”.

The batter contains the same core ingredients – flour, milk and eggs, but with a twist.

Coconut versions replace plain flour and caster sugar in this instance, and the pancakes also have a hint of chocolate with the addition of cocoa powder.

High-fibre pancakes recipe

Start by beating the eggs in a mixing bowl until the whites and yolks are completely combined and frothy.

Next, pour in the milk and coconut flour, followed by the coconut sugar, baking powder and cocoa powder, then mix everything.

Grate the zest of one lemon into the mixture and stir once more until the batter is completely melded together and smooth.

Set aside for a few minutes to allow the coconut flour to absorb all of the ingredients, then melt the butter in a pan over medium heat.

Add one tablespoon of mixture flat into the pan to form the first pancake, leaving it to cook until it bubbles on the top.

At this point, flip it over and cook on the other side for a further 30 seconds, then repeat until all of the batter is used up.

To serve, stack the pancakes on a plate and scatter the raspberries, banana and sunflower seeds on top. Finish with a drizzle of Agave nectar or honey.
