It seems as though the summery weather has come to an abrupt end in the UK, with the heatwave conditions now turned to rain for many. However, it’s not all bad news – these drizzly days are perfect for staying inside and baking some delicious sweet treats.
Sometimes the most simple bakes are the best, and if you’re a fan of shortbread, then you’ll want to take note of one ultra-easy recipe.
TikToker Home With BB says you can make a delicious batch of soft, crumbly shortbread cookies using just three ingredients. If easy recipes are your go-to, then another one that’s worth trying is this two-ingredient loaf that’s made in the air fryer.
Hailing it as ‘a simple treat for a rainy day’, the chef – who is known for her easy yet tasty recipes – created this batch of shortbread using just flour, caster sugar and butter.
Then, it’s just a matter of mixing them all together, rolling the dough out, cutting them into your favourite shapes and baking until golden. It’s the perfect recipe for kids due to its simplicity, but the whole family are guaranteed to love it.

Here’s how you can make it at home.
Three ingredient shortbread

- 330 g flour
- 90g caster sugar, plus extra sugar to sprinkle on top
- 250g salted butter
Method
First, preheat your oven to 375º F/ 190 ºC/gas mark five.
Meanwhile, cut your butter into cubes and leave out to soften in a bowl for 15 minutes. Then, weigh your caster sugar and add to your butter.
Mix the butter and sugar for a few seconds before sifting in the flour and mixing to form a dough. You don’t need an electric mixer for this – using your hands actually works better.
Sprinkle your worktop with some flour and roll out the dough. Make sure it’s quite thick and not rolled out too thin so the biscuits aren’t too crumbly.
Use a cookie cutter or a cup to cut out shapes in your dough. Then, line a baking tray and bake your shortbread for 15 – 20 minutes on the middle shelf of your oven, until slightly brown on the edges but still pale in colour.
Sprinkle your shortbread with sugar immediately once out of the oven, and enjoy.
