How to make chicken fajitas
Ingredients
- Two chicken breasts, finely sliced
- One red onion, finely sliced
- One red pepper, sliced
- One red chilli, finely sliced (optional)
For the marinade
- One tbsp smoked paprika
- One tbsp ground coriander
- ground cumin
- Two garlic cloves, crushed
- Four tbsp olive oil
- One lime, juiced
- Tabasco
Method
Preheat the oven to 200C (180C for fan ovens) or gas mark six, then enclose eight medium tortillas in aluminum foil.
In a mixing bowl, combine a heaped tablespoon of smoked paprika, a tablespoon of ground coriander, a small amount of ground cumin, two crushed garlic cloves, four tablespoons of olive oil, the juice from one lime, and four to five drops of Tabasco. Season generously with salt and black pepper.
Add two chicken breasts, one red onion, one red bell pepper, and one thinly sliced red chili (optional) to the bowl. Mix thoroughly to ensure everything is well coated with the marinade.
Place a griddle pan over high heat until it starts to smoke, then transfer the marinated chicken and vegetables into the hot pan.
Cook over high heat for around five minutes, turning frequently with tongs to achieve a well-charred, slightly blackened appearance. If your griddle isn’t large enough, cook in separate batches.
To confirm the chicken is fully cooked, break open the thickest piece — there should be no raw or pink meat inside. Continue cooking if necessary. Warm the wrapped tortillas in the oven and serve with the cooked chicken mixture, mixed salad leaves, and add salsa and guacamole if preferred.
