How to make a hearty and healthy avocado dish if you ditch toast

Making a quick, delicious and healthy snack can be difficult, especially if you’re looking for variety. Most home cooks opt for avocado on toast, and if they need extra protein, they will add a fried egg on top. While avocados are packed with healthy fats, fibre, and vitamins, adding extra carbs from toast can lead to bloat and tiredness.

If you’re looking for a delicious, hearty yet healthy quick meal, then we suggest making stuffed avocados. An expert chef at Good Food shared that adding spicy beans and feta will elevate the green fruit. They said: “This super speedy meal is packed with vegetarian sources of protein—top creamy avocados with spicy kidney beans and crumbled cheese.”

This recipe only takes 11 minutes to prepare and can serve up to two people. Below, we have detailed how to make it courtesy of Good Food. You can also discover how to make a tasty, creamy avocado by adding one ingredient here. 

Ingredients 

  • ½ teaspoon of cumin seeds
  • 210g can red kidney beans
  • One large lime
  • Three tomatoes
  • One banana shallot
  • One green chilli
  • A handful of coriander
  • 85g feta
  • One large or two small avocados

Method

To begin, lightly toast cumin seeds in a small pan, then combine them in a large bowl with beans, lime zest and juice, tomatoes, shallot, chilli, and coriander.

Next, crumble in the feta and gently toss everything together. Spoon the mixture onto avocado halves, garnish with extra coriander leaves, and finish with a squeeze of lime wedges.

Alternatively, if you’re after a savoury treat on a warm slice of toast, but want to substitute avocados, then we suggest tomato confit. According to expert cooks, swapping out avocado for this dip creates a “savoury-sweet” treat that’s “jammy,” satisfying, and full of flavour.

A chef at the Mediterranean Dish shared, “This confit tomato recipe is inspired by the tradition of preserving summer’s bounty. This gentle method not only concentrates the flavour of the tomatoes, but also preserves their soft, silky texture and infuses the oil with tomato essence and those of garlic and herbs.

“The oil itself becomes just as delicious as the tomatoes!” This method , courtesy of the Mediterranean Dish, aims to serve up to eight people or three cups.
