How to cook orzo with chicken using Mary Berry’s easy 10-minute recipe

Orzo is a type of pasta that is shaped like large grains of rice, often referred to as “rice-shaped pasta,” that pairs well with creamy sauces and stocks alike.

Mary Berry’s recipe from her cookbook ‘Mary’s Foolproof Dinners,’ is a quick and filling meal that’s perfect for busy weeknights or casual dinner parties.

The tender orzo soaks up the creamy sauce, while the perfectly cooked chicken and fresh spinach add colour and texture.

Whether you’re eating at home with family or hosting friends, it’s a dish that’s sure to impress with minimal effort.

When prepared per instructions, this hearty pasta recipe serves four to six and cooks in 10 to 30 minutes.

Mary Berry’s creamy chicken orzo recipe

Ingredients

275g/9¾oz orzo

Two chicken breasts, skin removed and sliced into thin strips

Two tbsp olive oil

Knob of butter

One onion, finely chopped

250g/9oz chestnut button mushrooms, sliced

150ml/5fl oz white wine

One garlic clove, grated

150g/5½oz baby spinach

150g/5½oz soured cream

55g/2oz Parmesan, finely grated

One tbsp fresh lemon juice

Salt and freshly ground black pepper

Method

Begin by cooking the orzo in a large pot of salted boiling water, following the package directions, or until it is tender. Once cooked, drain the orzo and set it aside.

Next, season the chicken with salt and pepper. Heat the oil in a deep frying pan with a lid over high heat.

Add the chicken and cook, turning occasionally, until golden brown on all sides and cooked through. Once done, remove the chicken from the pan and set it aside.

In the same pan, melt the butter. Add the onion and sauté over high heat for a few minutes, stirring regularly. Then, cover the pan and allow the onion to soften for about 10 minutes.

After removing the lid, stir in the mushrooms and cook until they release their moisture and begin to brown.

Pour in the wine and allow it to reduce slightly. Add the garlic, spinach, and soured cream, then bring everything to a simmer.

To finish, stir in the orzo, cooked chicken, Parmesan cheese, and a squeeze of lemon juice.

Season with salt and pepper to taste and toss the ingredients together until everything is heated through. Serve in individual bowls, and enjoy!
