Even better, it takes hardly any time at all to make the scrumptious sausage lunch. Requiring very little cooking skill at all, it’s the perfect recipe for a simple yet delicious lunch that is sure to impress. If you want to elevate a sausage sarnie for a more sophisticated dish, here’s how you can do it.
Method
Heat a splash of oil in a large skillet over medium-high heat. Add the chorizo and cook until the edges are crispy.
Lower the heat to medium, add the onions, and cook until translucent, then add garlic and cook until fragrant.
Push the ingredients to the side of the pan, add the tomatoes, cut side down, and cook till they blister. Meanwhile, toast the sourdough bread.
Add a splash of chicken stock to the sausage pan and simmer until the liquid has reduced by half.
Season, then remove from the heat and add a splash of sherry vinegar and most of the parsley.
Spread avocado on the toasted sourdough bread slices, sprinkle with salt and a squeeze of lemon juice.
Add the chorizo mixture onto the slices of bread, then top with marinated frisée lettuce. Shave the cheese on top and add more parsley.
